Club Chef - Day in The LifeA How was your day?

Our chef for this month (December) is our own Chef Whitney He is the Executive Chef at The Beach If you are in town stop by for a visit.
A typical work day for me is:
Up at 8
Play with baby
Computer-check emails etc
Personal accounting etc
Write any articles or web searching necessary
Office by 12:00 (usually the sous-chef works
the night and the executive chef works 8am-6pm but I like to be where the action is and we do the bulk of our business between 12pm-10pm)
Discuss with Sous-Chef issues for the day
Oversee any lunch parties
A la Carte Lunch runs itself-no monitoring
necessary
Check the grill-make sure daily specials look
good
2:30 F&B meeting on Wed
2:30 senior staff meeting on Fri
Thurs, Sat & Sun sometimes go for a surf
or a workout if no big parties or summer club event
4:30 back in office-work on menus for the
night (they change daily) Work with the line on any new specials
5:00-meeting with waiters to talk about
specials
5:30 restaurant opens
Expedite the line
Cruise dining rooms all possible breaks from
the line-we have three distinct dining areas-Bar, Formal and Bistro
(if my wife is down I often walk the dining
rooms with the baby-lots of fun!-members really enjoy-very unique situation-I don't think I mention that I was a member of the club since I was 7 years old!)
Shmooze with members, send special items to
table, tailor make dinners for tables (I call this VIP dinners-they don't know what they're going to get!) Check email once more before closing up office
Stop at each part of the club and thank all
workers for a job well done
Exit club between 10pm and 12am
